The Basil & Rosemary Shrub

Pre-prep: essentially you make a vinegar based shrub using the herbs – 100g basil, 50g rosemary, 4 dehydrated lemon wheels, 150ml vinegar, 200ml sugar syrup which you blend for 5 minutes then fine strain and bottle (this keeps in the fridge).

35ml Hope Mediterranean Gin, 25ml basil and rosemary shrub, Soda and or tonic to serve
Rosemary or basil sprig
Stir the gin and shrub in a glass on ice. Top with soda water or with tonic (or half and half).
On the rocks, garnished with a sprig of rosemary or basil.
