25ml Hope Mediterranean Gin, 1 packet of pitted black olives, A generous handful of fresh basil, washed, 1 lemon, juiced, 200ml tonic water
Basil and a few olives.
In a mortar and pestle, roughly smash about 3-4 olives with a few sprigs of basil. Fill a cocktail shaker with ice and add the basil-olive mixture, the lemon juice and the gin. Shake to combine and infuse the gin. Pour into a tumbler filled with ice and top up with tonic water. Garnish with fresh basil and a few black olives skewered on a cocktail stick.
